We are back after a week off of HelloFresh! I must say, I had almost forgotten how long it takes me to plan meals, make shopping lists, etc. I was really looking forward to our next order after the end of the week. First up is this shrimp taco recipe. Aren't tacos always a good idea? We seem to think so--we almost always rate the HelloFresh taco meals well, and this one was no exception. Bonus was that it was NOT my night to cook--my husband and son took over the prep tonight!
Speaking of which, I was told that the prep for this meal was not too bad. There were two of them working on this meal, but it took less than 30 minutes from start to finish. This is another HelloFresh meal that I think would be easy to re-create on your own. Essentially it's just shrimp with a southwest seasoning, sautéed poblanos and onions, a quick pico and an easy sour cream sauce. (Side note: I really like the Southwest seasoning that HelloFresh uses in several recipes--I'm going to try and find something similar in the store to use in my own recipes.) It would be a great meal on a night when you need to get dinner on the table quickly--which seems like most nights for us.
Everyone enjoyed this meal, and I would order it again. (I also liked that this meal had about 600 calories--lower than usual for HelloFresh.) Thumbs up from all!
