One of our latest food obsessions has been Poke Bowls. We love the simplicity and freshness of the ingredients, and have gone to enough Poke restaurants by now to know just how we like to order them. Kind of like ordering sushi in a bowl form.
After many (not inexpensive) dinners out, we finally realized that what we were ordering was so simple that we could try and re-create at home. And the result was even better than our favorite restaurant! We found a local market that sells sushi grade tuna and salmon (salmon is our favorite), and chopped up a few of our favorite poke toppings. This poke sauce is one of the key ingredients--our local grocery store carried it for a while, but now I've only found it on Amazon. It's better than most of the restaurant sauces we've tried! Another easy addition is some sriracha mayo--I just wisk together 4 teaspoons of mayo with one teaspoon of sriracha.
So, in addition to the sauce and salmon, we just make some sushi rice, and cut up various toppings--mango, edamame, cucumber, green onions, and avocado. Then we just have everyone serve themselves the way they prefer. Delicious!! And a bonus--it's less than half the price of ordering at a restaurant!
